Place the cranberries and dates in a bowl and cover with some boiling water. Allow the berries and dates to soak in this water for 15 minutes. Add the cashews to a food processer and blend until fine. Drain the cranberries and the dates and add to the cashew nuts, along with the remainder of the ingredients. Blend until a dough forms. If the mixture is too sticky, add some more coconut and if the mixture is too dry, add some water. Roll the dough into balls and either leave as is or roll in the desiccated coconut. Pop into the fridge for at least 45 minutes.
